Friday nights in our house are family movie night. We either rent a movie, watch a DVD we already own or watch a movie on TV. While there is always popcorn a plenty to be enjoyed, my kiddies (and Hubby) always want something a little more filling to eat while we watch the movie. But I don't like having to miss part of the movie just to whip them up something good to eat. And the budget doesn't always allow for ordering out. So, what's a mom to do?! Pop a few Bolillo Snack Pizzas in the oven.

Bolillo Snack Pizzas are a quick and easy way to enjoy pizza, without having to order out or going through all the fuss of waiting for your homemade pizza dough to rise. All you need are Mexican bolillo rolls, a jar of pizza sauce and whatever toppings you can find in your fridge and/or pantry. 


My girls and I love veggies such as mushrooms, tomatoes, olives, zucchini and bellpepper on our bolillos pizzas. Hubby prefers deli ham, canned pineapple and jalapeño peppers. And my boys only want salami, pepperoni, or chorizo. The possibilities are endless! And best of all the the entire family can help put these together, allowing you more free time to enjoy a movie or play a board game with them.

Bolillo Snack Pizzas

Ingredients:
  • 6 bolillo rolls, split in half lengthwise and cut in half cross-wise 
  • 1 jar pizza sauce
  • 8 oz. pepperoni
  • 8 oz. Oaxaca or Mozzarella cheese, shredded

Directions:
Preheat oven to 375ºF. Lightly grease a large baking sheet with cooking spray. Arrange the bolillo slices (split side up) on the baking sheet. Spread 1 to 2 tablespoons of pizza sauce on each slice of bolillo roll. Top bolillo slices with pepperoni (or your favorite pizza toppings). Sprinkle shredded cheese on top. Bake for 10 to 15 minutes or until cheese has melted completely and turns light golden brown. Remove from oven and top baked Bolillo Snack Pizzas with grated Parmesan cheese, red pepper flakes, and/or your favorite hot sauce. Enjoy!

  2. I am vegan Leslie and I absolutely love your blog. It inspires me to make the non animal version of your food. Its so funny I live here in Missouri and we have a pretty decent latino community here, pero all the freshest and better latina foods are in the american tiendas and not in our tienditas (loca right) i got the best bolillo rolls from an american grocery store.
