I don't know if you've heard or not, but there's a big football game coming up in the next couple of weeks, and last night my favorite team secured their place in the main event. Woo-hoo! Go Patriots!!! To celebrate my team's big win, I'm sharing one of my game day favorites, because as much as I love watching football and rooting for my team, the thing I look forward to most is the food. My ideal game day menu includes nachos, chicken wings, tacos, guacamole, beer, and lots and lots of pizza. Like this Pizza de Mole (Chicken Mole Pizza), topped with a store-bought mole sauce, shredded chicken, Oaxaca cheese, red onion, and chopped cilantro. No matter who you're rooting for, this pizza will be the real winner!

It's the beginning of a new month which means it's time for another edition of The Secret Recipe Club. This month my assignment was Edesia's Notebook written by Lesa, a mid-western wife and mom with two very precious little girls. I was immediately drawn to Lesa's blog just from the title because Edesia is the name of the Roman goddess of food. (I love Greek and Roman mythology!)

As usual the kiddies and I looked through Lesa's blog trying to decide which of her mouth-watering recipes to make. Family friendly recipes like Baked Tilapia w/ Spinach & Tomatoes, Tequila Marinated Steak Quesadillas, and Strawberry Caprese Salad were just a few that caught my attention.

Ultimately we chose Lesa's Bacon Ranch Chicken Pizza because who doesn't love pizza? And with ingredients like ranch dressing and bacon, we really couldn't resist. This colorful pizza was a huge hit with everyone, including my suegro (father-in-law) and my boys who usually pick off the veggies I try to sneak on their pizza. I'm pretty sure it was the ranch dressing that got them to eat all their veggies and I'm totally okay with that.



Secret Recipe Club: Bacon Ranch Chicken Pizza

We're baaaack! After a short 2 month hiatus, girlichef & I are back to bring you more She Made/Ella Hace. Our theme this month: Football Eats! Today's recipe combines two of my favorite foods to eat when watching The Big Game (or any other major sporting event)...cheeseburgers and pizza.

My son Nick is the one who actually came up with the idea for this recipe about 8 or 9 years ago when he couldn't decide which of his two favorite foods in the whole wide world he wanted to eat at his birthday party. One day he'd choose pizza, then minutes later he'd change his mind and say he wanted cheeseburgers, only to change his mind again minutes after that. I suggested we serve both, but then he came up with the genius idea of combining to the two into a Cheeseburger Pizza, that way he'd get the best of both worlds. And the rest as they say is history.  Now Cheeseburger Pizza is a beloved family favorite.

Where does the time go?  It seems like it was just yesterday that the kiddies were getting out of school for summer vacation.  And then BAM!  It's over.  Has it really been six weeks???  My kiddies go back to school tomorrow, although Hope (my 15 year old) started at her new high school on Wednesday.

As short as our summer vacation was, I'm not too sad because I know we packed in as much fun as we could.  And that's all that really matters.  Not how long or short our vacation was.

My kiddies are all pretty excited to go back to school.  Jack's looking forward to finding out who his new teacher is going to be.  Ashley's looking forward to showing off her new short 'do to all her friends.  Nick's looking forward to being an 8th grader.  And Hope is/was looking forward to making new friends at her new school.

This past week I've been busy getting everything ready for the first day of school.  We've gone school supply shopping, picked up the kiddies' new uniforms, and I have their backpacks all packed and ready to go.  All that's left to do is to pack their lunch.  That is actually the easiest of all my back-to-school preparations.  Every year, for as long as I can remember, my kiddies have requested the same thing for their First Day of School lunch...Pizzadillas.  It looks like a quesadilla on the outside, but it's stuffed with all the same goodies you'd put on a pizza.  A pizza quesadilla!


Pizzadillas

Ingredients:
  • Flour tortillas
  • 1 lb. pepperoni
  • 1-1/2 to 2 cups pizza sauce
  • Shredded mozarella, Oaxaca, or Asadero cheese
  • Sliced black olives (optional)
  • Sliced mushrooms (optional)
  • Thinly sliced red onion (optional)
  • Thinly sliced bell pepper (optional)
  • Sliced jalapeño peppers (canned or homemade) 

Directions:
Spread 1 tablespoon of pizza sauce on a flour tortilla.  Top with shredded cheese, sliced pepperoni, and whatever other toppings you love.  My kiddies love jalapeños and olives on their pizzas, but you could also add some sliced mushrooms and/or bell peppers. 


Top with another flour tortilla.  Cook the pizzadillas on a lightly greased comal or skillet over low heat, until both sides of the quesadilla are lightly golden and the cheese has melted.  Serve with pizza sauce on the side.  Enjoy!

Pizzadillas #SundaySupper

I used to think that BBQ Chicken Pizza topped with slices of red onion and chopped cilantro was my favorite pizza.

Coming in at a very close second place was Veggie Pizza topped with zucchini, tomato, mushrooms, olives and bell peppers.

But after making this pizza with Homemade Chorizo and sliced jalapeño peppers, I have a new all-time favorite that I like to call Mexican Pizza.

And to make it even more Mexican, I baked it on a cast iron comal (griddle), which results in a crispier  crust.

Ingredients:
  • Pizza Dough  (I like to use Quick Beer Pizza Dough)
  • 1/4 to 1/3 cup tomato sauce or jarred salsa
  • 6 to 8oz. Mexican Chorizo, cooked
  • Canned Jalapeño slices
  • Asadero or Oaxaca Cheese or Queso Fresco (or a Mexican cheese blend)

Directions:
Preheat oven to 375F.  Grease a pizza pan or cast iron comal with vegetable oil; set aside.  Roll out your pizza dough on a lightly floured surface; transfer dough to pizza pan.  Spread tomato sauce over the pizza dough.  Top with the cooked Chorizo.

And last, but not least, follow with a layer of lots of shredded cheese.  Bake at 375F for about 20 minutes or until the cheese has melted and the crust has turned a light golden brown.

Top with your choice of bottled hot sauce, Chile de Molcajete or Homemade Red Pepper Flakes Enjoy!!!

Getting my boys to eat their vegetables isn't always easy.  Unless they're on a pizza.

Veggie Pizza is a fun food that the kiddies can help prepare.  My kids love to choosing which vegetables to use.  We usually use zucchini, tomato, onion, bell pepper, mushrooms and olives.  But I also like to use broccoli, spinach, basil and cilantro leaves.

You can use refrigerated pizza dough, a baked pizza crust or make you own.  For this pizza I used my long-time favorite pizza dough, but you could also use the Quick Beer Pizza Dough recipe I posted earlier this week.

As for sauce, I used a handmade tomato sauce that I had left over from earlier in the week.  But you can use whatever sauce you like.

If you're trying to get your kids to eat more vegetables, this is a great way to do.  And they'll enjoy it even more if you let them help in making the pizza.


Veggie Pizza

Ingredients:

  • Prepared Pizza Dough or Crust
  • Pizza Sauce
  • Your choice of vegetables (thinly sliced)
  • 2 cups shredded Oaxaca or Mozzarella cheese


Directions:
Preheat oven to 425ºF.  Grease a baking sheet with vegetable spray.  Sprinkle generously with Maseca or cornmeal.

 


Roll out the pizza dough to desired size.  Place dough on baking sheet.
 
 


Spread 1/4 to 1/2 cup of your favorite pizza sauce on top of the pizza dough.



Arrange the veggies on top of the sauce.



Top with cheese.  Bake at 425ºF for 20 minutes or until cheese has melted and the crust has turned a light golden brown.



For even more veggie consumption, serve this pizza with a delicious garden salad.  Enjoy!!!

I love pizza!  Delivery is nice and easy, but there's really nothing like a homemade pizza. I make homemade pizza for my family at least 3 or 4 times a month. For years, I've only used my old standby recipe for pizza dough because even though I've tried others none have cause too great of an impression.

While waiting for my oven to be fixed, I looked through the pile of recipes I've found online that I wanted to try but never got around to trying any of them.  Determined to start baking again once my oven was fixed, I compiled a new "to bake" list. On the top of my list was a recipe I found on the King Arthur Flour website for Quick Beer Pizza Dough. Beer + pizza = a match made in heaven. So I just knew that this recipe was going to be good.

The first thing that really stood out to me about this recipe was how easy it was to follow with just a handful of ingredients. But my favorite part, aside from the taste, is that there's no need to heat any liquid to a certain temperature. All that's needed is a room temperature beer.  If you've ever found working with yeast to be a little intimidating, this is the perfect recipe for you to try.

As for the taste, it was better than I had imagined. The beer really enhances the flavor of the yeast, which makes for a much tastier pizza dough. I've already made this recipe 3 times in the past couple of weeks and fall in love with more ever time I try it. The dough tastes even better when made a day in advance. This Quick Beer Pizza Dough is quickly on it's way to becoming my new go-to recipe. And did I mention that this dough also makes really great breadsticks?

Quick Beer Pizza Crust (from King Arthur Flour)


Ingredients:
  • 4 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1 teaspoon baking powder
  • 1-1/2 teaspoons salt
  • 2 Tablespoons olive oil
  • 1-1/2 cups room-temperature beer

Directions:
Combine the flour, yeast, baking powder and salt in a medium bowl. Pour in the beer and oil; mix well. Turn dough onto a lightly floured surface and knead until dough is smooth and elastic. Place dough in a greased bowl; turn greased side up.  Cover dough and let set until double in size. (This could take anywhere from 30 to 90 minutes.) Divide dough in two and turn onto lightly floured surface. Roll out to desired thickness. Place the dough on a lightly greased baking sheet. Top with your favorite toppings. Bake at 425ºF for about 20 minutes or the crust is golden brown and the cheese has melted completely. Enjoy!

Now that we have our pizza dough, it's time to have some fun.  Deciding what to put on your pizza is the best part.  We all have our favorites, but why not be little adventurous and try something new.  When I make pizza, I love to raid my fridge and pantry to see what creative pizza I can come up with.  It's a great way to use up any leftovers.

This week, I happened to have all the ingredients to make BBQ Chicken Pizza.  The BBQ flavor of the sauce is perfect with the Quick Beer Pizza Dough.

BBQ Chicken Pizza

Ingredients:

  • Quick Beer Pizza Crust
  • 1 to 2 chicken breasts, cooked and shredded into large chunks
  • BBQ Sauce (Use your favorite)
  • Onion Slices
  • Fresh Cilantro
  • 2 cups Oaxaca or Mozzarella Cheese, shredded or sliced

Directions:
Combine the shredded chicken with a couple tablespoons of your favorite bottled bbq sauce; mix well.



Spread 1/3 cup of bbq sauce over slightly baked pizza crust.

 


Top with shredded chicken, onion slices and fresh cilantro leaves.

 

Top with cheese.
Bake in 425ºF oven for 20 minutes or until cheese has melted and started to bubble. Enjoy!!!

Pizza & Beer {Quick Beer Pizza Dough & BBQ Chicken Pizza}

Friday nights in our house are family movie night. We either rent a movie, watch a DVD we already own or watch a movie on TV. While there is always popcorn a plenty to be enjoyed, my kiddies (and Hubby) always want something a little more filling to eat while we watch the movie. But I don't like having to miss part of the movie just to whip them up something good to eat. And the budget doesn't always allow for ordering out. So, what's a mom to do?! Pop a few Bolillo Snack Pizzas in the oven.

Bolillo Snack Pizzas are a quick and easy way to enjoy pizza, without having to order out or going through all the fuss of waiting for your homemade pizza dough to rise. All you need are Mexican bolillo rolls, a jar of pizza sauce and whatever toppings you can find in your fridge and/or pantry.

I realize that my previous post was a yeast bread recipe, but I wanted to share with you one of the first recipes I prepared upon moving to Mexico.

I love pizza and so does the rest of my family. One of the first things that my husband and I noticed when moving to Mexico, was that the pizza wasn't up to our standards. Nothing that we tasted here came close to the pizza that we were used to back home in the States.

Then I remembered making pizza from scratch on a few occasions. All I had to do, was find my recipe for pizza dough and then head to the local bakery to buy some yeast. One of the panaderías (bakery) is owned by my husband's godfather, Don José. I had hoped to find packages of quick active dry yeast, because I had never used any other kind, but was told by Don José that his bakers only used fresh yeast. Don José reassured me that using fresh yeast was no different than using the quick active dry yeast, and that maybe, one day, I'd prefer using the fresh. Don José gave me (he refuses to charge us), the amount of fresh yeast that I would need for one kilo of flour. (One kilo is just a little over 2 pounds.)

Needless to say, we were able to enjoy a delicious pizza. And on a very happy note, packages of instant yeast are now readily available at one of the local cremerías (shops). Here is my recipe for pizza dough.

Pizza Dough


Ingredients:

  • 2-1/2 to 3 cups all-purpose flour
  • 1 envelope instant yeast*
  • 1 teaspoon salt
  • 1 cup very warm water (120ºF)
  • 3 tablespoons olive oil


Directions:
In large bowl, combine 1 cup flour, undissolved yeast and salt.


Stir very warm water and olive oil into flour mixture.  Beat 2 minutes by hand or with an electric mixer on medium speed.



Stir in 1 cup of remaining flour; mix well. Stir in enough remaining flour to make a soft dough.


Knead on lightly floured surface for 8 to 10 minutes, until dough feels smooth and elastic.


Place dough in a large bowl that has previously been sprayed with vegetable spray; turn greased side up. Cover with plastic wrap and let set 30 minutes or until dough has doubled in size.


Shape dough into smooth ball. Divide and roll dough to fit desired pan(s). Top pizza with your favorite toppings. Bake at 400ºF for 20 to 30 minutes.  Enjoy!!!


*Note: You can also use quick active dry yeast for this recipe.  Just dissolve it in the hot water and let it set for about 10 minutes before adding it to the flour.
