Are you ready for some football?! Even if you're not big on football, you're going to love this week's #SundaySupper theme which is all about delectable Super Eats for the Big Game later today.

My favorite foods to serve at our annual Super Sunday party are NachosSpicy Hot Wings, Pizza, Homemade Onion Dip, Micheladas and Jalapeño Poppers. Mmmm, Jalapeño Poppers! I LOVE me some stuffed jalapeños! I love them stuffed with cheese, or chorizo, or spinach. The latter are my current faves because of my recent obsession with spinach. Just by making a slight change to my Espinacas con Crema (Creamed Spinach) recipe, I had the perfect stuffing that plays so well with the spicy sweetness of the jalapeños. And did I mention that there's bacon in the stuffing?

Even if you're not having a football party this weekend, these Spinach-Stuffed Jalapeño Poppers make for a delicious appetizer for any occasion.

We're baaaack! After a short 2 month hiatus, girlichef & I are back to bring you more She Made/Ella Hace. Our theme this month: Football Eats! Today's recipe combines two of my favorite foods to eat when watching The Big Game (or any other major sporting event)...cheeseburgers and pizza.

My son Nick is the one who actually came up with the idea for this recipe about 8 or 9 years ago when he couldn't decide which of his two favorite foods in the whole wide world he wanted to eat at his birthday party. One day he'd choose pizza, then minutes later he'd change his mind and say he wanted cheeseburgers, only to change his mind again minutes after that. I suggested we serve both, but then he came up with the genius idea of combining to the two into a Cheeseburger Pizza, that way he'd get the best of both worlds. And the rest as they say is history.  Now Cheeseburger Pizza is a beloved family favorite.

Football season is upon us once again, which means it's time for our 2nd Annual #SundaySupper Tailgating Party.  No matter what team you're rooting for, be it the New England Patriots (my fave team) or some other team, it's practically impossible (not to mention unthinkable) to watch a game without something delicious to eat.  

These Tortilla Wrapped Hot Dogs, which are a very popular street food here in Mexico, also make for a delicious snack to eat while watching your favorite team battle it out on the football field.   If you've never had a hot dog wrapped in a crisp golden fried tortilla, you have been missing out.  They are highly addictive and finger lickin' good.

Tortilla-wrapped Hot Dogs

Ingredients:
  • 12 corn tortillas
  • 12 hot dog sausages (beef, pork, or turkey) 
  • Vegetable oil (for frying) 
  • Ketchup 
  • Mustard
  • Salsa 

Directions: 
Heat corn tortillas on a comal or griddle until soft and pliable.  Wrap tortillas around hot dog sausages, securing with a toothpick. You can leave the hot dog sausages whole, or slice them into quarters for a bite-size snack.  (Secure each piece with a toothpick.)

Heat about 1 cup of vegetable oil in a deep skillet or saucepan.  Carefully drop Tortilla Wrapped Hot Dogs into the oil and fry until the tortilla is crisp and golden.  Remove hot dogs to a paper towel lined plate to drain off any excess oil.  Serve Tortilla Wrapped Hot Dogs with your favorite condiments: ketchup, mustard, or a spicy salsa.  Enjoy!

Tortilla-Wrapped Hot Dogs #SundaySupper

Over the years I've mentioned how much I love September.  First of all, it's my birth month, making this the most awesome month of all.  When I was a little kid, September also meant apple season and time to go back to school.  And now that I live in Mexico, September is all about the fair, parades, and celebrating Mexican Independence Day.

But there is another reason I love September...it's football season!  It's also futbol (soccer) season, but I still love American football a little more.  When we're lucky enough to find a game being televised, you can find me and Hubby camped out in front of the TV with an ice cold glass bottle of Mexican Coca-Cola and one of our favorite football foods: Pollo Adobado.  It's a little bit spicy, more than a little saucy, and if you're like my kids who love to eat this with their hands, it can be a little bit messy.  But it is a whole lot of deliciousness.  Sure to score a touchdown with your family!

I usually bake my Pollo Adobado at home, but we've also baked it in the big clay oven at the ranch.  And if you don't feel like turning on the oven at all, you can make it in your crockpot.




Pollo Adobado con Papas
(Adobo Chicken with Potatoes)

Ingredients: 
  • 3 dried ancho chilies
  • 1 medium onion, cut in quarters
  • 2 cloves garlic
  • 1/2 teaspoon ground cumin
  • 2 pounds chicken, cut up
  • 6 medium potatoes, cut in wedges
  • 4 to 6 oranges, cut in half  (or 1 cup of orange juice)

Directions: 
On a griddle or comal, heat 1 teaspoon of vegetable oil over medium-high heat.  Toast the onion on the comal until it softens and the skins has charred slightly; set aside.  Toast the dried chilies and garlic for a few seconds on each side, remove from heat.  Transfer the dried chilies to a small saucepan and bring to a boil in 2 cups of water to soften the chilies.  Let cool slightly.  Remove the stems and seeds from the chilies, then puree the chilies in a blender with the toasted onion and garlic and the water the chilies were cooked in.  Season with 1 teaspoon of salt, and the ground cumin.



In a large baking pan, combine the chicken and potatoes; season with salt and pepper.  Pour the adobo sauce over the chicken and potatoes, making sure each piece is covered with adobo.  Squeeze the oranges over the chicken, removing any seeds.  If you don't have fresh oranges on hand, you can use 1 cup of orange juice.  Again, mix well to combine the adobo with the orange juice.



Bake in a preheated oven at 350F for 45 minutes to an hour or until the chicken starts to pull away from the bones.

Homemade Nachos

We're halfway through January already and there is really only one thing I can think about:  Football! The Super Bowl to be exact.

Every year, my older, college student nephews and one of their friends, whom we've adopted as another nephew, come over to watch the big game.

Now everybody knows that you can't have a Super Bowl party without delicious food and cheesy, spicy snacks.  One of our favorites, year after year, is Nachos.  

We could head downtown to buy a plate of bright, neon-orange imitation cheese sauce served on Nacho flavored Doritos for 10 pesos (less than a dollar) a plate, but there's nothing like a homemade cheese sauce made with real cheese.

Most cheese sauces are made with a roux (butter & flour) and milk base, but I prefer mine a little creamier, so I use Mexican crema.   My favorite is this thick and rich crema from Tototlan, Jalisco.   Isn't it gorgeous?

The secret to my cheese sauce is in the special little something I add to it to give it extra flavor....Jalapeño vinagre.  It's the liquid canned jalapeños are packed in.  It's not so spicy that it will burn your tongue off, but it does add that extra jalapeño flavor that gives you the illusion that you're eating jalapeños, even if you can't handle the heat of actually eating them.

Nachos

Ingredients:
  • 2 tablespoons butter
  • 2 cups Mexican crema
  • 2 tablespoons jalapeño vinagre (the liquid jalapeños are packed in)
  • 6 to 8 oz. Manchego cheese (I used 200 grams), cut in bite-size cubes
  • 6 slices American cheese, cut in bite-size pieces
  • Tortilla Chips
  • Canned jalapeño slices


Directions:
Melt the butter in a medium saucepan over medium-low heat.  Stir in the Mexican crema and jalapeño vinagre and continue to cook, stirring occasionally, until the sauce is warm.

Stir in the cheeses.

Continue to cook, stirring occasionally, until the cheeses have completely melted.  Season with salt and pepper.  (If the sauce is still too thick, stir in more jalapeño vinagre, one tablespoon at a time.)

Ladle cheese sauce over tortilla chips and top with jalapeño slices.  Enjoy!!!

*If you have any leftover Cheese Sauce, it's delicious served on top of steamed veggies like broccoli and/or cauliflower!

Nachos

We spent the weekend at El Rancho this weekend helping my brother-in-law and his family harvest bell peppers. I love the smell of fresh bell peppers, but the aroma of these homegrown bell peppers was so intoxicating. I wanted to bite into those bell peppers as if they were a juicy apple. And the entire time we were gathering the bell peppers, all I could think of was getting home to make my Philly Cheesesteak Molletes. If you like Philly Cheesesteaks, you're going to love these Philly Cheesesteak Molletes. Open faced sandwiches made with sauteed onion and bellpepper, tender cuts of beef on a crusty bolillo roll with refried beans and topped with delicious melted Manchego cheese.

Philly Cheesesteaks

Ingredients:
  • 2 tablespoons vegetable or olive oil 
  • 4 large bell peppers, thinly sliced
  • 1 large onion, thinly sliced
  • 1 clove garlic, minced 
  • 1-1/2 pounds thin-cut beef steak, cut in strips
  • 6 bolillo rolls, cut in half lenghtwise
  • 2 cups Refried beans (homemade or canned) 
  • 2 cups shredded Manchego cheese

Directions:
Heat 2 tablespoons of vegetable oil in a large skillet, over high heat. Add the sliced bell pepper and onion; saute for 2 to 3 minutes. Stir in the minced garlic and saute for an additional 30 seconds. Add the thin-cut beef steak; season generously with salt and pepper. Saute the meat until no longer pink. Cover the skillet and reduce heat to low. Let simmer until all of the juices from the meat have been absorbed and the meat is tender.

While the meat is cooking, heat the refried beans in a small saucepan; set aside. Spread the bolillo slices with Refried Beans. Spoon meat and bell pepper mixture on top of the refried beans. Top each mollete with cheese. Arrange the molletes on a lightly greased baking sheet and bake for 10 to 15 minutes or just until the cheese has completely melted and started to bubble. Enjoy!

Friday nights in our house are family movie night. We either rent a movie, watch a DVD we already own or watch a movie on TV. While there is always popcorn a plenty to be enjoyed, my kiddies (and Hubby) always want something a little more filling to eat while we watch the movie. But I don't like having to miss part of the movie just to whip them up something good to eat. And the budget doesn't always allow for ordering out. So, what's a mom to do?! Pop a few Bolillo Snack Pizzas in the oven.

Bolillo Snack Pizzas are a quick and easy way to enjoy pizza, without having to order out or going through all the fuss of waiting for your homemade pizza dough to rise. All you need are Mexican bolillo rolls, a jar of pizza sauce and whatever toppings you can find in your fridge and/or pantry.
