It's still summer... It's still summer... It's still summer... I have been repeating these words to
myself all week because in my mind it's already fall. The leaves are falling off the tree outside my bedroom window. I'm already dreaming about making all sorts of delicious fall goodies. Just yesterday I cooked 3 kilos (like 6 pounds) of Camotes Enmielados (Candied Sweet Potatoes in Piloncillo Syrup), which made my house smell like one of those Bath & Body Works fall candles. And my kiddies all go back to school tomorrow.

But as excited as I am about fall, a part of me isn't ready to let go of summer just yet. It's probably because the kiddies' summer break was only 5 weeks long this year, which has to be the shortest. summer. break. EVER! Thankfully Hubby kindly reminded me that just because school starts tomorrow doesn't mean that summer season is officially over. My calendar clearly marks that we still have one whole month of summer to enjoy. So with that in mind and because peanut butter and jelly is the first thing that comes to mind when I think of back-to-school lunches, I made the kiddies these PB&J Paletas (popsicles) as a cool (and delicious) afterschool snack to help beat the heat of the dog days of summer.

One bite of these Peanut Butter & Jelly Paletas and I'm sure you'll agree that they taste like a pb&j sandwich on a stick. Only way cooler!

With summer just around the corner, my foodie BFF girlichef and I thought it only fitting that we make paletas for this month's She Made/Ella Hace. Both Heather (girlichef) and I both have a fondness for paletas. I think they are the perfect summer dessert, so cool, sweet, and refreshing. And they look so cute on those little wooden sticks. I don't know about you, but I've always thought foods on a stick just taste better than foods not on a stick.

Again, girlichef and I were on the same wavelength with this month's theme. She made Dulce de Leche Paletas and I made Caramel Pecan Paletas with cajeta (a Mexican caramel sauce). These paletas were inspired by one of my favorite snacks: plain yogurt with a sprinkling of chopped pecans and cajeta drizzled on top. As much as I enjoy my mid-morning snack, I love these Caramel Pecan Paletas even more! The tartness of the yogurt, the sweet creaminess of the cajeta, and the crunchy nutty flavor of the pecans combine together to make the perfect summer dessert.

Cheesecake Paletas & My 1st Guest Post


Before we get started on our Cinco de Mayo celebration, I want to take a moment to explain  my absence from the blog recently.  I know I haven't been hanging around here as much as we'd all like.  A lot of you have written in wondering where I've disappeared to.  I sincerely apologize for having disappeared without giving you any type of explanation.

The short and simple truth is that my suegro has been sick.  It's nothing deathly serious.  He suffers from severe depression and requires constant care.  My days have been spent looking after him, cooking for him, and making sure he takes his meds.  Little by little, he is getting better, even though he still has his bad days.  We've all had to make some adjustments, but I think we've finally settled into a routine.

So here I am ready to get back to doing what I love most...cooking & blogging.  And you know I can't resist a good fiesta, especially with my #SundaySupper amigos.

Today I'm sharing Paletas de Tamarindo.  They are a sweet, tangy, and super refreshing way to keep your cool at any fiesta.


Paletas de Tamarindo
(Tamarind Ice Pops)

Ingredients:
  • 8 to 10 oz. tamarind pods
  • 6 cups water 
  • 1-1/2 to 2 cups granulated sugar
Directions:
Peel the tamarind pods by removing the hard outer shell, the stems, and the strings.  If you have a hard time removing all that, don't worry, it'll all come lose once the tamarind has cooked.

In a medium saucepan, simmer the tamarind pods and the 6 cups of water for about 10 to 15 minutes.  This will soften the tamarind, making it easier to remove any shell, stems, or strings.  Using a potato masher, gently crush the tamarindo to break up the pulp.  Scoop out any seeds you see.  (I like to leave a few in there.)

Stir in the sugar; let tamarind juice cool to room temperature.

Pour the tamarind juice into plastic popsicle molds or small plastic cups.  (If using plastic cups, cover with aluminum foil and insert popsicle sticks in center of each foil-lined cup.  The aluminum foil helps to hold the popsicle sticks in place.)  Freeze for about 3 hours or until firm.  Enjoy!!!

Paletas de Tamarindo #SundaySupper #CincodeMayo



It's hard to believe that it's been 4 years since I started this little blog of mine.  But it's true...La Cocina de Leslie turned 4 years old yesterday!  Time sure does fly by when you're having fun.  I have had a blast writing and cooking with all of you, and getting to know you through your blogs, comments, and/or emails.  From the bottom of my heart I thank all of you who continue to visit this blog, even though I haven't posted much these last two months.  I'll explain all about my absence in a future post, I promise.  But right now, it's time to get this birthday party started!

To celebrate this joyous occasion, I've got one heck of a decadent treat for you...Nutella Yogurt Paletas!  Spring has sprung here in Mexico, which means it's the hottest time of the year.  And well, there's no better way to help keep your cool than a paleta (popsicle).  This may be the shortest and easiest recipe I've ever posted, but trust me, you're going to thank me for this recipe.  Nutella Yogurt Paletas are creamy, fudgy, slightly tart, and oh-so rich and delicious.  They're so good, I bet you can't eat just one!


Nutella Yogurt Paletas

Ingredients:
  • 3 cups plain yogurt
  • 1 cup Nutella 

Directions:
In a medium bowl, stir together the yogurt and Nutella until well combined.


Spoon (or pour) the Nutella-Yogurt mixture into plastic cups.  Insert popsicle sticks into the center of each cup.  (The yogurt mixture is thick enough to hold the popsicle sticks in place.)


Chill in freezer for at least 2 to 3 hours.  To unmold, run warm water around the plastic cups for about 30 seconds.  Enjoy!!!

Nutella Yogurt Paletas to Celebrate La Cocina de Leslie's 4th Birthday!


We're only two weeks in, but I am really loving summer vacation.  Sleeping in until 8am, hanging out all day with my 4 favorite people in the world (my kiddies), and spending time with visiting friends & relatives from the US...It really doesn't get much better!  Mid-morning, the kiddies and I walk downtown to do our grocery shopping for the day.  Once we're done, we sit in El Jardin (the town square/plaza) to do a little people watching.  Sometimes, when it's really hot, we'll stop at the paleteria (ice cream & popsicle shop) for agua fresca, ice cream and/or paletas (ice pops) to help us keep our cool.

In the afternoons, I'll sit out on the sidewalk enjoying the cool afternoon breeze while watching the kiddies play with all the neighborhood kids.   Again, when it's really hot, we'll buy an icy cool treat from whoever stops by first: the ice cream truck or the paletero (popsicle vendor).  But sometimes when it's too hot to walk the two blocks to the nearest paleteria and we don't even feel like venturing out to our sidewalk, the kiddies and I head into the kitchen to make our own paletas.  And that's just what Girlichef and I are making for this month's installment of She Made / Ella Hace.

Our favorite paletas to make this summer have been these Paletas de Jamaica y Limón (Hibiscus Flower & Lime Ice Pops).  The subtle floral taste and aroma from the dried hibiscus flowers combined with the tartness of the lime juice make for one tart and refreshing paleta.  And the color is just stunning.   



Paletas de Jamaica y Limón (Hibiscus Flower & Lime Ice Pops) 
(Recipe adapted from Mexican Everyday by Rick Bayless)

Ingredients:
  • 3 cups water
  • 1 cup sugar
  • 1 cup dried hibiscus flowers
  • 1/2 cup fresh lime juice
Directions:
In a medium saucepan, combine the water and sugar; mix together until the sugar has completely dissolved.  Cook the dried hibiscus flowers in the sugar water over medium-low heat until  .  Let cool to room temperature.  Stir in lime juice.  Pour into paleta molds or small plastic/paper cups.  Let freeze for about 35 to 40 minutes before inserting sticks.  (Or if you're using plastic cups and are afraid you'll forget to insert the sticks, cover the plastic cups with a small piece of aluminum foil.  Pierce the center just barely with the tip of a knife.  Insert popsicle sticks or plastic spoons.)  



Freeze for 3 hours or overnight.  Enjoy!!!
