It's the first Monday of a new month which means it's time for this month's Secret Recipe Club reveal. My assignment this month is Adventures in All Things Food written by Andrea, who keeps herself busy on her family farm along with her husband and their three adorable children. Andrea's blog has a little bit of everything: delicious recipes, tales of family and farm life adventures, crafts, book reviews, product reviews and giveaways. There's something for everyone to enjoy.

Secret Recipe Club: Zucchini Bread Pancakes

This recipe for Chile de Huevo (en Chile Colorado) might look familiar to longtime readers of La Cocina de Leslie. It was one of the first recipes I ever posted on this blog. That was six years ago and it's one of those recipes that kind of got lost in the shuffle and hasn't really gotten the love I think it deserves. Because it's Throwback Thursday, and  because Chile de Huevo was one of my favorite breakfasts growing up, I thought it would be fun to share this recipe again.

Chile de Huevo (eggs in chile sauce) was a dish that both Gramm and Pappy (my grandparents) often made for breakfast. It was one of those easy, no-fuss meals that didn't require anything more than scrambled eggs and leftover enchilada sauce. Pappy liked to add nopales (cooked cactus paddles) to his Chile de Huevo, but back then I was not a big fan of nopales at all. Thank goodness times have changed because now I can't imagine having this dish without the nopales. They really do help to bring this dish together.

Spinach, requesón, mushrooms, and manchego cheese combine to make these irresistible Spinach Squares that can be served for brunch, a light lunch, or even as an appetizer.

I've said it time and again, eggs aren't just for breakfast. They are my favorite ingredient to turn to on those days when I've been too busy to cook or when the cupboards are getting a little bare. With just a few ingredients that I always keep on hand, even when the budget is tighter than usual, I can cook up a delicious meal that can be served for breakfast, lunch, or dinner.

Literally translated Huevos Ahogados means drowned eggs, but this is really poached eggs in a tomato salsa with roasted poblano pepper strips. While that long title does sound pretty fancy, I prefer the name Huevos Ahogados.

For a complete meal serve Huevos Ahogados with avocado slices, cooked nopales (cactus paddles), and warm corn tortillas.

National Taco Day (October 4th) is just around the corner, so this month for She Made/Ella Hace girlichef and I decided to give you something to taco 'bout.

Over the years I've shared many a taco recipe here in my Cocina, including my favorite tacos ever - Tacos de Chorizo.  But for some reason I've never blogged about the taco we eat most in our house...Tacos de Frijoles.  My kiddies love them for breakfast before they leave for school.  Hubby loves to eat them any time of day.  And I love them because they remind me of my childhood.  Gramm always packed a couple Tacos de Frijoles in my lunchbox when I was a kid, so I'd grow healthy and strong.  My friends loved to trade me their bologna sandwiches for my Mexican lunch.

There's really not much to making Tacos de Frijoles.  All you need is some tortillas and refried beans.  If you want to get really fancy, you can add some queso fresco and your favorite salsa.

Comfort Food Classics: Tacos de Frijoles con Queso {She Made/Ella Hace}

We're serving up Breakfast for Dinner this week for #SundaySupper!  And well, I can't think of a better breakfast food to serve up than a stack of pancakes.  But these aren't just any ordinary pancakes, these are my very special Tres Leches Pancakes reserved for special occasions like holidays, birthdays, and anniversaries...and sometimes just because it's a day of the week that ends in "day".

Like the very popular Pastel de Tres Leches (Three Milks Cake) these Tres Leches Pancakes are bathed in a combination of sweetened condensed milk, evaporated milk, and regular milk.  That's three different kinds of milk, hence the name Tres Leches (three milks).

The idea for these pancakes came to mind after learning that my sis-in-law uses pancake mix to make her super delicious Tres Leches Cake.  I figured if she could make a Tres Leches cake with pancake batter, then I could make Tres Leches pancakes too.  Of course, they were a HUGE hit with Hubby and the kiddies.  But sometime in the course of the last 7 or so years, I've switched from using my favorite pancake mix to using a box of cake mix.  That is after all what I usually use when I want to satisfy my craving for a Tres Leches cake and I really wanted my Tres Leches Pancakes to taste like my favorite cake.

I prefer to use French Vanilla cake mix, but a plain yellow cake mix will work too!

What breakfast foods do you like to have for dinner?

Tres Leches Pancakes

Ingredients:

  • 1 box French Vanilla cake mix
  • 3 eggs
  • 1-1/3 cups milk
  • 3 tablespoons vegetable oil
  • 1 can (14 oz.) sweetened condensed milk
  • 1 can (12 oz.) evaporated milk
  • 1/2 cup milk or half-and-half
  • Fresh strawberries (optional)

Directions:

  1. Prepare the pancake batter by mixing together the cake mix with the 1-1/3 cups milk, 3 eggs, and 3 tablespoons of vegetable oil; set aside.  (The batter might seem thin, but will thicken while standing.)
  2. In a medium bowl make the Tres Leches mixture by combining the sweetened condensed milk, evaporated milk, and 1/2 cup regular milk; set aside.  (You can also use half-and-half.)
  3. Heat 1 tablespoon butter or vegetable oil in a non-stick skillet over very low heat.  Ladle about 1/3 cup of batter into center of skillet.  Let cook for 3 to 4 minutes or until golden brown.  (Check pancakes for doneness after 2 minutes, because these pancakes brown quickly!)
  4. With a spatula, CAREFULLY flip the pancake over and continue to cook until golden brown. Transfer pancake to heatproof platter.  Continue with remaining batter.
  5. To serve...stack the pancakes one at a time, spooning 3 to 4 tablespoons of the Tres Leches mixture over each pancake.  Garnish with sliced strawberries.  Enjoy!

Tres Leches Pancakes #SundaySupper

Feliz Día del Padre!  Today for #SundaySupper we're celebrating Father's Day.  Since I happen to be married to one of the awesomest (yes, that a word in my dictionary) dads ever, I thought I'd share another of his all-time favorites...Chorizo Burgers!

But before I get into the recipe, I want to share a little something about my Hubby.  Like I said, he's an amazing father and a wonderful husband, but he's what you'd call a picky eater. (At least that's what he thinks.)  If prompted, he'll tell you he doesn't like cheese, pasta, seafood, chocolate, and a long list of other ingredients I can't remember at the moment.  But at the very top of his list is...CHORIZO!  (Gasp!)  He's lucky we were already married when he shared that little tidbit of information.  I couldn't believe my ears when he told me.  How could he not like chorizo?  I've been in love with the stuff since I first tasted it, way back when I was 4 years old.  It's how I learned to speak Spanish!

It wasn't easy, but I was determined not to let this chorizo thing affect our marriage.  We were newlyweds, which to me meant that I had a lifetime to change Hubby's mind about chorizo.  After a few months of marriage, I started to notice something else about my Hubby.  For a man who claimed to be such a picky eater, he sure spent a lot of time eating the very foods he claimed to not like, including chorizo.

Turns out Hubby's not as picky an eater after all!  Which is great, because otherwise we may not have ever discovered these tasty Chorizo Burgers.

The base of this recipe is the Homemade Chorizo recipe from The Homesick Texan I shared a couple of years ago.  Don't let the words "homemade chorizo" intimidate you.  It's really not that hard to make.  The hardest part, for me, is waiting for the chorizo to set overnight to allow the flavors to intensify.  After that, all you have to do is shape the chorizo into patties, fry 'em up, top them with queso fresco and caramelized onions and you are good to go.  And if you want an even tastier burger, try topping your Chorizo Burger with a fried egg.  It is heaven on a hamburger bun!

Chorizo Burgers
Chorizo recipe from The Homesick Texan by Lisa Fink

For the chorizo:
  • 2 dried guajillo chilies
  • 2 dried ancho chilies
  • 2 to 4 tablespoons apple cider vinegar
  • 1/4 medium onion
  • 4 cloves garlic
  • 1 pound ground pork (with at least 20% fat)
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • !/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt

For the burgers:
  • 2 large onions, sliced
  • Queso Fresco, Manchego cheese, or mild cheddar
  • Hamburger buns
  • Eggs (optional, but highly recommended)

Directions:
In a small skillet over high heat, toast the dried chilies on each side for about 10 seconds.  Fill the skillet with about 2 cups of water to cover the chilies.  Bring the water to a boil, then turn off heat.  Let the chilies soak for about 10 minutes or until really soft.  Remove the stems and seeds from the chilies.

Puree the chilies in a blender with the onion, garlic, and 2 tablespoons of the apple cider vinegar, adding more vinegar if necessary.  (The puree should be about the same consistency of ketchup.)

Add the chili puree to the ground pork, along with all of the spices and salt.  Mix well.  Cover with plastic wrap and refrigerate for atleast one hour.  (I recommend refrigerating the chorizo overnight, so the flavors have a chance to meld giving the chorizo a stronger, more intense flavor.)

Once your chorizo is made, but before you start on your burgers, let's caramelize some onions.

Heat 2 tablespoons of olive oil in a medium skillet over high heat.  Add the onion and saute for about 2 minutes, stirring constantly.  Reduce heat to low and continue cooking, stirring occasionally, until the onions have caramelized; set aside.

Now let's make some burgers!

Shape the chorizo into 6 patties.  Heat 2 to 3 tablespoons of vegetable oil in a large skillet or griddle over medium heat.  Brown the patties for 6 to 8 minutes on each side until completely cooked.  Top each patty with a couple of slices of queso fresco.

Serve chorizo patties on a lightly toasted hamburger bun.  Top with caramelized onions and a fried egg.  Enjoy!!!

Homemade Chorizo Burgers #SundaySupper

This particular blog post has me envisioning a 1990's Calvin Klein-esque commercial shot entirely in black & white, with shots of scantily clad celebrity chefs (Hello, Tyler Florence!) swimming in a pool of milk, whispering the word "Obsession."  Because that's exactly what today's recipe is, my latest obsession...Fruity Oat Smoothies.  I drink one every. single. day.  Sometimes two.  And that's why girlichef and I agreed to make smoothies the subject of our latest installment of She Made/Ella Hace.

I've added a handful of oats to my smoothies before and loved them, but I was never obsessed with them like I am now.

This obsession of mine started a couple of months ago when my suegro's (father-in-law) doctor "suggested" that I make him an Oat Smoothie once a day.  I started out making a smoothie just for Don Chuy.  Then Hubby wanted one.  As did Hope (my 15 year old), who some days gets home from school before noon.  And well, seeing everyone else drinking a smoothie, I wanted one too.

For this recipe I used strawberries, because that's what's in bloom right now and they're just too pretty to resist.  But I switch things up during the week and also make it with papaya, mango, and/or banana.  I really can't pick a favorite, because they're all absolutely delicious!

What about you...What's your latest food obsession???

Licuado de Fresa y Avena
(Strawberry Oat Smoothie)

Ingredients:
  • 3/4 cup cold milk
  • 6 large strawberries
  • 2 tablespoons dried oats
  • 2 tablespoons sugar or honey
  • Ground cinnamon

Directions:
Puree the milk, strawberries, oats, sugar, and a dash of ground cinnamon in a blender cup until smooth and creamy.  (About 1 minute.)  Pour into glass; sprinkle top with more ground cinnamon.  Enjoy!!!

Love is in the air and I am in the mood for...chocolate!  Lots and lots of chocolate.  And since chocolate makes the heart grow fonder, I whipped up a little something special for the people I love most.  A rich, Chocolate Bread Pudding made with my favorite kind of chocolate...Mexican chocolate.

This Mexican Chocolate Chunk Bread Pudding is so sweet and delicious, it's like tearing off pieces of a fresh baked bolillo roll and dipping them into a cup of Mexican hot chocolate.  But it's like 10 times better, because the chocolate doesn't completely dissolve and disappear into the milk.  The Mexican chocolate melts into these super soft morsels that have a slightly grainy texture from the cinnamon and sugar the Mexican chocolate is flavored with.

I made this bread pudding as a dessert, but it would also make for a sweet breakfast to surprise your loved ones with, say on Valentine's Day morning.

Mexican Chocolate Chunk Bread Pudding
(recipe from Herbivoracious by Michael Natkin)

Ingredients:

  • 4 bolillo rolls, cut into bite-size pieces
  • 4 eggs
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • 1/3 cup sugar
  • Pinch of salt
  • 2 disks Mexican chocolate (Abuelita or Ibarra brands), roughly chopped
  • Whipped cream (optional)

Directions:
Preheat oven to 350F.  Generously butter a large baking dish.  Arrange the bread pieces in the baking dish and let sit uncovered for about an hour to allow the bread to dry out a little.

In a large bowl, whisk the eggs until light and fluffy.  Slowly, whisk in the milk until well combined; stir in the sugar, vanilla, and salt.  Pour the the milk mixture over the bread, tossing lightly to make sure every piece is evenly coated.

Top with the chocolate; stir ever so lightly to make sure you get a little bit of chocolate in every bite.

Cover baking dish with aluminum foil and bake at 350 for about 45 minutes.  Remove from oven and let set for about 10 minutes.  To serve, top with a dollop of whipped cream and a dash of ground cinnamon.  Enjoy!!!

Mexican Chocolate Chunk Bread Pudding #SundaySupper

After an extended break, I am back to posting with my food blogging friends for #SundaySupper.  Today is actually a very special day for #SundaySupper, because we are celebrating it's 1st birthday.  (Throws a handful of confetti and blows on a noisemaker.)

I first learned about #SundaySupper several months ago, through my good friend Girlichef. #SundaySupper just sounded like something I wanted to be involved in, because I grew up eating dinner every day at the family table with my grandparents, and continue to do so with my hubby and four kiddies every day for lunch.  And we really do have Sunday supper every Sunday with my father-in-law, Hubby's siblings and their families.

Anyway...to celebrate #SundaySuppers turning a year old, our theme this week is to cook something that has already been featured on #SundaySupper, by one of our fellow contributors.  There have been so many mouth-watering recipes shared in the last 12 months of #SundaySupper, that it could have been a really difficult decision to narrow the choice down to just one.  But thankfully that wasn't the case for me.

I fell in love with this recipe as soon as I saw it posted on Juanita's Cocina just a few months ago for the #SundaySupper Autumn Apple Party...Cinnamon Apple Chimichangas.  Oh my!  As beautiful as they looked, and as delicious as I imagined them to be, what really drew me to this recipe was that it looked like something my grandpa would have made.  He loved apple desserts, and passed that love on to me.

When I first made Jen's Cinnamon Apple Chimichangas, I couldn't get over how delicious they were, from the warm, cinnamon spiced apple filling to the golden, crisp flour tortilla.  (Sigh!)  They reminded me of the fried apple pies you could get at McDonald's way back in the day, except these were SO much better!  But Hubby said they reminded him of Toaster Strudels.  That got me to thinking that these would make fort a tasty breakfast treat and wondered if they could be baked, kind of like mini-apple strudels.  The results were just as delicious and they've been a big hit in our house ever since.  I now keep a container of unbaked apple chimichangas in the fridge at all times.  I love that they're small enough that I can toss a couple of them into our little toaster oven, while I make my morning cup of coffee.

Happy Birthday, #SundaySupper!  And as we say here in Mexico, Que cumplas muchos años mas!  (And many more!)

Baked Cinnamon Apple Chimichangas
(recipe adapted from Juanita's Cocina)
lacocinadeleslie.com

Ingredients:
  • 6 gala apples, peeled, cored, & roughly chopped
  • 2 tablespoons butter
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon fresh lime juice
  • 1 teaspoon unflavored cornstarch
  • 1 tablespoon water
  • 10 to 12 (6-inch) flour tortillas
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Directions:
Melt butter in a large skillet over medium heat.  Add the apples, granulated sugar, and cinnamon to the skillet; mix to combine.  Stir in lime juice.  Cover and let cook over medium-low heat, stirring occasionally, until the apples are fully cooked.

In a small bowl, combine the water and cornstarch.  Pour into the apple mixture and let cook for about a minute or until the juice from the apples has thickened slightly.  Remove from heat and let cool to room temperature.

Preheat oven to 350F.  Heat the flour tortillas on a comal or skillet over medium heat until soft and pliable.  Spoon two tablespoonfuls of apple filling into center of each tortilla.

Fold in the sides to seal in the filling, and roll up the tortilla like you would a burrito.

Place seam side down on a lightly greased baking sheet.  With the tip of a very sharp knife, carefully cut 2 or 3 diagonal slits on top of each chimichanga.  Bake at 350 for 12 to 15 minutes, or until the chimichangas are light golden brown and crisp to the touch.

Stir together the 1/2 cup of powdered sugar with the tablespoon of milk, until well combined.  If too thick, add a little more milk, until desired consistency.  Drizzle the glaze over the chimichangas.  Enjoy!!!
