Meatless Recipes for Cuaresma (Lent)

Today is Ash Wednesday, the first day of Cuaresma (Lent). That means that today and every Friday from now until Easter Sunday we will be going meatless, which also means the return of Meat-Free Fridays here in La Cocina. This year I'm joining my friend Silvia from Mamá Latina Tips and a few of our blogging friends to bring you new meatless recipes every week. Every Friday from now until Easter Sunday, I'll be sharing both vegetarian and seafood dishes along with a couple of recipes for capirotada (bread pudding). Tune in this Friday for Spinach Entomatadas Suizas!

For those of you that observe Cuaresma (Lent) and are looking for menu ideas, I've gathered a collection of my favorite meatless recipes that are tried and true family favorites that we eat year after year during this time of year.

What are your favorite Cuaresma (Lent) dishes?

  2. Thanks for the response Leslie! I posted this to my fb page and raved about your site as well. Every recipe I try turna out fab!

This one turned out just as beautifully! My 4 year old ate 2 legs and a thigh and was LITERALLY licking the sauce off the plate. Ahe kept saying "thank you mami, for making me such yummy food!" (She kills me with her "thank yous" ) . Will freeze the leftovers per your advice, it will be a quick dinner waiting for us in the freezer for a lazy day.

Thanks again! Hope your week goes well!
