It's Saturday morning and you've just woken up from one of the best nights of sleep you've had in a long time.  You lay in bed without opening your eyes not wanting such a peaceful moment to end.  Knowing that you can't stay in bed forever, you open one eye hoping to ease into reality.  But something is not right.  There is more sunlight shining through your bedroom window than usual.  You open both eyes, and squint at the clock on your wall because your eyes haven't had a chance to focus.  Is it really 9 o'clock?  Ay Dios mio!  It's 9 o'clock in the morning!  I slept in and I have so much to do today!!!

We've all had that kind of morning.

You then head into the kitchen to pour the kiddies a bowl of cereal for breakfast, but realize that they finished it off the day before.  Fear not!  You can whip up a delicious breakfast with just a few leftovers from the fridge.  (Or cans and jars from your pantry.)

That's exactly what I did this morning!  I've only had my new fridge for a few days, but already I have some great leftovers to work with: Refried Beans, salsas and cheese, not to mention the bolillo rolls sitting on the counter.

Molletes are so quick and easy to put together and really are a delicious breakfast any day of the week.  Toasted bolillo rolls, refried beans and lots of yummy melted cheese...all topped with spicy salsa.  Mmmm-mmmm!  Delicioso!!!

  • Bolillo Rolls
  • Refried Beans (Homemade or canned)
  • Asadero or Adobera Cheese (Or use your favorite cheese)
  • Salsa

Preheat oven to 400F.  Slice bolillo rolls in half lengthwise.

Spread cut side of bolillo rolls with Refried Beans.

Place bolillo rolls cut-side up on an ungreased baking sheet.  Top with generous amounts of shredded cheese.  Bake at 400F until cheese has melted and the bolillo rolls are slightly toasted and the beans are heated through.

Top with Chile de Molcajete , Pico de Gallo or your favorite salsa.  Enjoy!!!

  1. I love these, great change of pace from the regular breakfast

  2. I might have to make these for Jose and the girls for breakfast one morning, the girls love anything with refried beans on it!

  3. Mmmm...I love to eat molletes as a snack, too. I've had a molletes post in draft form since February...probably never get around to posting it...but I can live vicariously through yours ;)  I love morning when I get to sleep in until 9...heavenly...and rare ;)

  4. This looks delicious!  Will have to add to my list of things to try.

  5. Nice!  I am all for easy meals.

  6. You're a rock star! That is pretty darn good for something you whipped up out of no where!!! Looks delicious!

  7. My kids love molletes. They just love anything with bean and cheese.

  8. Me encantan los molletes. Mi mama usa el garlic bread cuando no tiene bolillo.
