With corn season, comes a wonderful treat that not very many know about...Huitlacoche

Huitlacoche

Huitlacoche is a corn fungus, kind of like a wild mushroom, that grows directly on the corn.  And it makes a delicious filling for quesadillas

Have you ever seen or tried Huitlacoche?

  1. I have always, ALWAYS wanted to try huitlacoche. Hubs tells me about it all the time, but I have been unlucky in my search. One day....

  2. I never try to cook huitlacoche, but I have a favorite dish at a local restaurant - Bouquinette stuffed with huitlacoche and mushrooms with sesame butter sauce.  It is heaven!

  3. I'm going to be the party pooper here and say that looks sort of gross!  Do you eat them raw right off the corn or you do pick them off and cook them or something? 

    As always, I learn something new from you all the time.  And, from my comment, you can see that I am not very adventurous when it comes to food.  But, I would trust you and try it!

  5. I don't know, Leslie. I think this might be a case of not wanting to know where my food comes from. My first impulse is to want to spray the thing with a can of pesticide. And I love mushrooms. Go figure. BTW, I think something was up with Discus, yesterday. I couldn't comment. : (
