I am so excited about this week's #SundaySupper theme (hosted by Alice of A Mama, Baby & Shar-pei in the Kitchen and Christy of Confessions of a Culinary Diva) because it includes my all-time favorite vegetable in the whole wide world... Zucchini! Actually it's a Squash Fest, which includes all types of squash like acorn and butternut squash, and also pumpkin (which I adore), but for me it's all about zucchini. It's such a versatile squash, and it's subtle flavor works so well with just about anything, be it sweet or savory.

Now as much as I love zucchini, not everyone in my family feels the same way. (Gasp!) My girls share my love for zucchini, but Hubby and our boys, will only eat zucchini if it's battered and fried (fried zucchini), breaded and baked (zucchini fries), or as part of a dessert. They also eat it in my Homemade Bolognese Sauce, but since I sneak it in there, they have no idea they're eating zucchini. The only time I've seen Hubby and my boys excited to eat zucchini is when I stuff it with Mexican chorizo. They're love for spicy Mexican chorizo combined together with my love for fresh zucchini makes us all one very happy family. And I'm sure you'll be just as happy when you try these Chorizo Stuffed Zucchini.

I have a confession to make... As much as I love empanadas, there is a certain empanada that I rarely ever make - Empanadas de Piña (Pineapple Empanadas). Not because I don't love them (which I totally do), but because there are the only two kinds of empanadas sold at most panaderías (bakeries) in my small town: pineapple and vanilla. Usually when I make empanadas at home, it's because I'm craving a kind that I just can't find here in Small Town, Mexico. But pineapple empanadas are so sweet and delicious, that every once in a while, I just HAVE to make them at home, because homemade pineapple empanadas are that good.

This week's #SundaySupper is Stuffed, Rolled, and Wrapped, hosted by kimchi MOM. Here in Mexico we have plenty of stuffed, rolled, and wrapped foods to choose from like tacos, gorditas, burritos, and enchiladas. The possibilities are endless. But honestly there was really only one thing I had in mind for this week's #SundaySupper theme...tamales! Tamales de Rajas con Requeson to be exact. Rajas are roasted poblano pepper strips, and requeson is like a Mexican ricotta cheese. Together they are a match made in heaven.

I know that the idea of making tamales from scratch can seem intimidating. If that's been the case for you, then this is the tamal recipe for you. Seriously, I don't think recipes for tamales can get any easier. (For easy to follow step-by-step instructions with photos on how to make tamales, see my recipe for Shredded Pork Tamales.)

This week's #SundaySupper theme is Eat Your Greens hosted by Foodie Stuntman! Whenever I think of greens, I immediately think of my favorite green, one I've loved since I was a little, itty, bitty baby...spinach! Spinach was the first baby food I ever tried, and after that no other baby food came close to being as good as my mushed spinach. (I was a cute, but very strange baby!) 

Even though I've come along way from those days, I still love me some spinach. Just not in a jar. My favorite way to eat spinach is in what I call Espinacas con Crema, which is just another way of saying Creamed Spinach. What I love most about my Espinacas con Crema, aside from it's incredible flavor, is that I can make it with either fresh or frozen spinach. Another awesome thing about this recipe, is that it has changed just about every one I know into spinach lovers, including my suegro (father-in-law), who used to cringe at the mere mention of spinach. Now he asks for it a couple of times a month. And that in my book makes this recipe a winner.

For this week's #SundaySupper theme, hosted by Tammi of Momma's Meals, we are going meatless. Personally, I couldn't be any happier because I'm always looking for new meatless recipes to serve during Lent for our meat-free Fridays.

The recipe I'm sharing today is one I make often, even when we're not observing Cuaresma (Lent). My favorite thing about these tacos, aside from their spicy and earthy flavor, is how incredibly easy they are to put together. All it takes is 3 ingredients: onion, mushrooms, and roasted poblano peppers. Recipes don't get much easier than that.

When I think of Mardi Gras/Fat Tuesday my mind immediately wanders to all the rich, decadent foods I want to enjoy before the seriousness of Cuaresma (Lent) starts the very next day. Here in Mexico we take Cuaresma very seriously. Most people, myself included, give up eating meat on Miercoles de Ceniza (Ash Wednesday) and every Friday until Easter Sunday. Martes de Carnaval (Fat Tuesday) is my last day to indulge in the rich and sinfully delicious foods I might be giving up for the 40+ day Lenten period. Not that I've decided to give anything up this year, but in years past I've given up Mexican Coca-Cola (which I no longer drink) and coffee (which I promised to never give up again).

Aside from coffee, my one guilty pleasure that I could never give up is chocolate, Mexican Chocolate to be exact. It can be used for so much more than just Mexican Hot Chocolate and Mole Dulce. One of my new favorite ways to enjoy sweet, cinnamon scented Mexican chocolate is in this Mexican Chocolate Coffee Cake. The cake is tender, and melt-in-your-mouth buttery delicious.

I've never been to a Mardi Gras celebration, but that's all about to change because this Sunday my #SundaySupper friends and I are bringing the festivities to you with a Fat Sunday party.

Mardi Gras is the annual celebration of Carnival with festivities in major cities around the world like Rio de Janeiro (Brazil), Mazatlán (here in Mexico), and New Orleans (US). The festivities conclude on Fat Tuesday, which is our last day to binge on rich, decadent foods (and beverages) before the Lenten season starts on Ash Wednesday.

Growing up chili was something we always got from a can. As unappetizing and unappealing as that sounds to me now, back then I considered it a treat. I loved that canned chili. It wasn't until years later after Hubby and I got married that I tried my hand at making my own chili from scratch, in hopes of changing my Hubby's mind about chili. Thankfully it was just the canned stuff that Hubby had a problem with, and once I had my first taste of real homemade chili I never went back to the canned stuff.

Are you ready for some football?! Even if you're not big on football, you're going to love this week's #SundaySupper theme which is all about delectable Super Eats for the Big Game later today.

My favorite foods to serve at our annual Super Sunday party are Nachos, Spicy Hot Wings, Pizza, Homemade Onion Dip, Micheladas and Jalapeño Poppers. Mmmm, Jalapeño Poppers! I LOVE me some stuffed jalapeños! I love them stuffed with cheese, or chorizo, or spinach. The latter are my current faves because of my recent obsession with spinach. Just by making a slight change to my Espinacas con Crema (Creamed Spinach) recipe, I had the perfect stuffing that plays so well with the spicy sweetness of the jalapeños. And did I mention that there's bacon in the stuffing?

Even if you're not having a football party this weekend, these Spinach-Stuffed Jalapeño Poppers make for a delicious appetizer for any occasion.

Pumpkin Chicken Enchiladas - lacocinadeleslie.com

It taken me a while this year, thanks to my recent obsession with sweet potatoes, but pumpkin has finally made an appearance in my Cocina.  I just couldn't resist a rather large calabaza de castilla (pumpkin) I saw at el mercado (the market) a couple of weeks ago.  As soon as I got that baby home, I cut it up, set aside the seeds to make Pepitas (roasted pumpkin seeds), and put it on the stove to cook.  I ended up with about 12 cups of pumpkin puree to do with as my heart desired.  And my heart has been desiring all kinds of yummy pumpkin dishes ever since.

Aside from making my usual favorites like pumpkin bread and pumpkin pie, I have been stirring pumpkin puree into just about everything; smoothies, tres leches cake (stay tuned for that recipe), Arroz con Leche (rice pudding), and even enchilada sauce.  Yes, enchilada sauce!  And it was AMAZING!  It knocked all of our socks off.  My hubby said it's the best enchilada sauce I've ever made.  We loved the pumpkin enchiladas so much, I've already made them twice this month. And they'll probably make another appearance at our table before the month is through.

The pumpkin adds a luxurious velvety texture to the sauce, and the spices (cinnamon, clove, cumin, and paprika) add a hearty robust flavor to the spicy and smoky dried chilies.  And the color is absolutely gorgeous!

Pumpkin Chicken Enchiladas



Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 medium onion, cut in half
  • 1 clove garlic
  • Cilantro
  • 3 dried ancho chilies
  • 1 dried guajillo chile
  • 1-1/2 cups pumpkin puree (unsweetened)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon paprika
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon ground clove
  • 1 cup chicken broth
  • 12 to 16 flour tortillas
  • Queso fresco, crumbled
  • Thinly sliced red onion, for garnish
  • Mexican crema

Directions:
Cook the chicken breasts with half of the onion, the garlic clove, a couple sprigs of cilantro, salt, and enough water to completely cover the chicken.  Once the chicken is completely cooked, remove from heat and let cool slightly; shred or chop the chicken.

While the chicken is cooking, prepare the Pumpkin Enchilada Sauce.  Bring the dried chilies to a boil in a medium saucepan with 2 cups of water. Remove from heat and let cool slightly.  Remove the stems and seeds from the chilies.  In a blender, puree the chilies with the water they were cooked in and the pumpkin puree until smooth.  Pour the pureed sauce into the same saucepan the chilies were cooked in.  If the sauce is too thick, add a little water, 1/4 cup at a time, until desired consistency.  Season the sauce with salt, ground cinnamon, paprika, ground cumin, ground cloves, salt and black pepper, adding more spices (if necessary) to fit your taste; set aside.

Finely chop the remaining half of onion.  Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.  Add the chopped onion and saute for about 1 minute.  Stir in the shredded chicken, 1 cup of the Pumpkin Enchilada Sauce, and the 1 cup of chicken broth.  Cook until heated through.

Now to make the enchiladas.  Preheat oven to 350°F.  Ladle 1/3 cup of the Pumpkin Enchilada Sauce into an 8 or 9-inch square baking dish.  Heat the flour tortillas until soft and pliable.  Spoon about 3 tablespoons of the chicken down the center of each tortilla and 1 to 2 tablespoons of queso fresco.  Roll tortilla up like a burrito and place seam side down in the baking dish.  Top first layer of enchiladas with half of the Pumpkin Enchilada Sauce and about 1/2 cup of crumbled queso fresco.  Repeat with a second layer of enchiladas.

Bake enchiladas in oven for about 30 minutes.  Remove from oven. Top enchiladas with Mexican crema and garnish with sliced red onion and finely chopped cilantro.  Serve with Refried Beans and Mexican Rice. Enjoy!

Pumpkin Chicken Enchiladas #SundaySupper

It's time for our annual #SundaySupper Halloween party!  When I think of a Halloween party, I envision all kinds of fun foods that looks like something you wouldn't normally eat, and regular foods (and beverages) with spooky and ghoulish names.  That's why for this year Halloween Extravaganza, I'm serving up a cocktail whose name is just perfect for a ghoulish Halloween party...Bloody Marias.  

Bloody Marias are the Mexican cousin of the classic Bloody Mary Cocktail because they're made with tequila instead of vodka.  And because tomato juice is a little hard to come by in my small town, I use V8 juice instead.  (I've also made these Bloody Marias with Clamato.)  And to spice things up a bit, I add a little salsa Valentina (my favorite bottled salsa).

Bloody Maria

Ingredients:

  • 2 oz. tequila
  • Fresh limes
  • Worcestershire sauce 
  • Valentina hot sauce 
  • V8 or tomato juice
  • Ground black pepper
  • Celery stalks (for garnish) 


Directions:
Wet the rim of a large glass with fresh lime juice, then dip rim in salt.  Turn glass over and fill glass with ice, Squeeze the juice of half a lime into the glass and add a dash or two of Worcestershire sauce and Valentina hot sauce.  Pour in the tequila and fill the rest of the glass with V8 juice.  Stir gently with a stalk of celery and sprinkle top with ground black pepper.  Enjoy!

Bloody Maria (Cocktail) #SundaySupper

I LOVE fall!  It is by far my favorite season of the year.  And not just because the 1st day of fall sometimes falls on my birthday.  (Like this year.  Happy Birthday to me!)  I love the crisper weather.  Watching the leaves fall from the trees.  Bundling up in my favorite sweater.  And all of the yummy, warm, comforting treats that are synonymous with the season.

Usually around this time of the year, I'm all about apples or pumpkins.  But right now I only have eyes for Sweet Potatoes and/or yams.  I always get the two confused.  But in Spanish I don't have that problem.  In Mexico we call both sweet potatoes and yams, camotes.  And the most popular sweet potato dish has to be Camotes Enmielados (Mexican Candied Sweet Potatoes).  They're these sweet, syrupy sweet potatoes cooked in piloncillo (unrefined sugar cones) and cinnamon that taste just like fall.  As soon as I flipped my calendar to September, I had a pot of Camotes Enmielados simmering away on the stove.  I can't think of a better way to celebrate my favorite season.

Camotes Enmieladitos
(Candied Sweet Potatoes)

Ingredients:
  • 2 lbs. sweet potatoes, cut in 2-inch slices
  • 2 cups water
  • 2 (3-inch) cinnamon sticks
  • 2 cones dulce macho (piloncillo) 

Directions:
Place the sweet potato slices in a dutch oven or large pot with the water and cinnamon sticks.  Arrange the piloncillo cones (whole) directly on top of the sweet potato slices.  Cover the pot and let simmer over low heat for about an hour until the camotes are completely cooked and the syrup has thickened slightly.  Let cool slightly.  Serve warm with milk or drizzle a little sweetened condensed milk on top.  Enjoy!

Camotes Enmielados (Mexican Candied Sweet Potatoes) #SundaySupper

Football season is upon us once again, which means it's time for our 2nd Annual #SundaySupper Tailgating Party.  No matter what team you're rooting for, be it the New England Patriots (my fave team) or some other team, it's practically impossible (not to mention unthinkable) to watch a game without something delicious to eat.  

These Tortilla Wrapped Hot Dogs, which are a very popular street food here in Mexico, also make for a delicious snack to eat while watching your favorite team battle it out on the football field.   If you've never had a hot dog wrapped in a crisp golden fried tortilla, you have been missing out.  They are highly addictive and finger lickin' good.

Ingredients:
  • 12 corn tortillas
  • 12 hot dog sausages (beef, pork, or turkey) 
  • Vegetable oil (for frying) 
  • Ketchup 
  • Mustard
  • Salsa 

Directions: 
Heat corn tortillas on a comal or griddle until soft and pliable.  Wrap tortillas around hot dog sausages, securing with a toothpick. You can leave the hot dog sausages whole, or slice them into quarters for a bite-size snack.  (Secure each piece with a toothpick.)

Heat about 1 cup of vegetable oil in a deep skillet or saucepan.  Carefully drop Tortilla Wrapped Hot Dogs into the oil and fry until the tortilla is crisp and golden.  Remove hot dogs to a paper towel lined plate to drain off any excess oil.  Serve Tortilla Wrapped Hot Dogs with your favorite condiments: ketchup, mustard, or a spicy salsa.  Enjoy!

Tortilla-Wrapped Hot Dogs #SundaySupper

This week for #SundaySupper we are celebrating Labor Day, which for those of you outside the US is celebrated on the first Monday of September.  I don't get to celebrate US Labor Day anymore, because here in Mexico it's just another Monday.  In Mexico we celebrate Labor Day (Dia del Trabajo) on May 1st.  

Just because I don't get to celebrate US Labor Day anymore, doesn't mean I don't think about it.  Remember what I always say...You can take the girl out of the US, but you can't take away her love of American holidays.  To me Labor Day has always been the "unofficial" end of summer.   And every first Monday of September, I long for that one last cookout with family and friends to bid farewell to summer.   We actually had our farewell cookout of the summer last weekend, where I whipped up these Margaritas de Flor de Jamaica (Hibiscus Flower Margaritas) to toast the unoffical end of summer.

Margaritas de Jamaica 
(Hibiscus Flower Margaritas) 

Ingredients:
  • 6 cups water
  • 1 cup granulated sugar
  • 1/2 cup dried hibiscus flowers
  • Limes
  • Tequila
  • Salt or granulated sugar

Directions:
In a medium saucepan, combine the water and granulated sugar.  Add the dried hibiscus flowers and simmer over low heat for about 15 minutes.  Remove from heat and let cool completely.  Strain the Hibiscus Flower Syrup into a decorative glass pitcher/caraffe or an airtight container and keep refrigerated until ready to use.    

To make the margaritas: Dip the rims of chilled glasses in lemon juice.  Then dip the moistened rims in salt or sugar, depending on whether you prefer your margaritas sweet or salty.  (I like to add a little grated lime zest to my salt and/or sugar for extra flavor.)  Fill glasses with ice.  Squeeze the juice of 1 lime in each glass.  Pour in 2 oz. of tequila, then fill glass with Hibiscus Flower Syrup.   Stir gently to combine.  Enjoy!!!

Margaritas de Jamaica (Hibiscus Flower Margaritas) #SundaySupper



Where does the time go?  It seems like it was just yesterday that the kiddies were getting out of school for summer vacation.  And then BAM!  It's over.  Has it really been six weeks???  My kiddies go back to school tomorrow, although Hope (my 15 year old) started at her new high school on Wednesday.

As short as our summer vacation was, I'm not too sad because I know we packed in as much fun as we could.  And that's all that really matters.  Not how long or short our vacation was.

My kiddies are all pretty excited to go back to school.  Jack's looking forward to finding out who his new teacher is going to be.  Ashley's looking forward to showing off her new short 'do to all her friends.  Nick's looking forward to being an 8th grader.  And Hope is/was looking forward to making new friends at her new school.

This past week I've been busy getting everything ready for the first day of school.  We've gone school supply shopping, picked up the kiddies' new uniforms, and I have their backpacks all packed and ready to go.  All that's left to do is to pack their lunch.  That is actually the easiest of all my back-to-school preparations.  Every year, for as long as I can remember, my kiddies have requested the same thing for their First Day of School lunch...Pizzadillas.  It looks like a quesadilla on the outside, but it's stuffed with all the same goodies you'd put on a pizza.  A pizza quesadilla!


Pizzadillas

Ingredients:
  • Flour tortillas
  • 1 lb. pepperoni
  • 1-1/2 to 2 cups pizza sauce
  • Shredded mozarella, Oaxaca, or Asadero cheese
  • Sliced black olives (optional)
  • Sliced mushrooms (optional)
  • Thinly sliced red onion (optional)
  • Thinly sliced bell pepper (optional)
  • Sliced jalapeño peppers (canned or homemade) 

Directions:
Spread 1 tablespoon of pizza sauce on a flour tortilla.  Top with shredded cheese, sliced pepperoni, and whatever other toppings you love.  My kiddies love jalapeños and olives on their pizzas, but you could also add some sliced mushrooms and/or bell peppers. 


Top with another flour tortilla.  Cook the pizzadillas on a lightly greased comal or skillet over low heat, until both sides of the quesadilla are lightly golden and the cheese has melted.  Serve with pizza sauce on the side.  Enjoy!
