Homemade Pizza de Mole (Chicken Mole Pizza)

I don't know if you've heard or not, but there's a big football game coming up in the next couple of weeks, and last night my favorite team secured their place in the main event. Woo-hoo! Go Patriots!!! To celebrate my team's big win, I'm sharing one of my game day favorites, because as much as I love watching football and rooting for my team, the thing I look forward to most is the food. My ideal game day menu includes nachos, chicken wings, tacos, guacamole, beer, and lots and lots of pizza. Like this Pizza de Mole (Chicken Mole Pizza), topped with a store-bought mole sauce, shredded chicken, Oaxaca cheese, red onion, and chopped cilantro. No matter who you're rooting for, this pizza will be the real winner!

Ingredients:

  • 2 tablespoons vegetable oil 
  • 1 (8.25 oz.) jar mole paste (I use Doña Maria brand) 
  • 5 cups chicken broth 
  • 4 cups cooked and shredded chicken breast 
  • Quick Beer Pizza Dough or 2 premade/refrigerated pizza crusts  
  • 3 cups shredded Oaxaca or mozzarella cheese 
  • 1/2 red onion, sliced 
  • 1/2 cup cilantro leaves 


Directions:
Heat vegetable oil in a deep skillet or medium saucepan over med-high heat. Add mole paste and chicken broth, stirring well until mole paste is completely dissolved; season with salt and pepper to taste. When mole sauce starts to boil, reduce heat to low. Cover and simmer for 5 minutes. Remove from heat and let cool to room temperature.

In a large mixing bowl stir together 2 cups of the mole sauce with the shredded chicken.

Preheat oven to 400°F. Grease 2 large pizza pans with cooking spray. Divide pizza dough in half. Roll out dough to fit pizza pans. Spread 1 cup of the mole sauce on each pizza dough. Top each pizza with 2 cups of the shredded chicken, 1-1/2 cups shredded Oaxaca cheese, and half of the red onion and chopped cilantro.

Bake pizzas at 400°F for 20 minutes or until the cheese has completely melted. Enjoy! 

Tip: This is a great recipe to use up leftover rotisserie chicken or roast turkey.
