Secret Recipe Club: Beer Mimosa

Fresh squeezed orange juice and chilled Mexican beer combine together for a fun twist on the classic mimosa.

Hello, friends! Welcome to another installment of The Secret Recipe Club. I've been apart of the SRC for a couple of years now, and have really enjoyed discovering new blogs from all over the world, learning about different cuisines, trying new recipes, and of course, making new friends along the way. Sadly, The Secret Recipe Club is coming to an end this month.

My assignment this month is The Spiffy Cookie written by PhD researcher in Microbiology, Erin, whose favorite food group is dessert. (Mine too!) But don't let the name of Erin's blog fool you, The Spiffy Cookie is about more than just cookies. There are lots of enticing sweet and savory recipes to choose from like pizzas, burgers, appetizers, entrees, soups, salads, and lots of yummy desserts. Erin's blog also has a selection of recipes for those cooking for one (or two).

Some of Erin's recipes that caught my eye were her Grilled Chocolate Chip Cookies, Peanut Butter Banana Bagels, and Peach Chicken with Balsamic Glaze. Ultimately I chose her Beermosa (Beer Mimosa), because I love beer cocktails and also because I have been craving mimosas since Hubby and I celebrated our 22nd wedding anniversary last month with a breakfast date that included a few fruity mimosas. And well, I can't think of a better way to bid farewell to a wonderful run with The Secret Recipe Club than a toast to celebrate of all the wonderful moments we've shared over the years. I will miss my SRC family, but plan to continue to visit everyone's blogs. And I will continue to share recipes here in my cocina, so be sure to stop by every once and a while to say "¡Hola!"

These beer mimosas are light, refreshing, and a little stronger than a traditional mimosa which makes them perfect for happy hour, tailgating, bonfires, or just hanging out with family and friends.

Beer Mimosa
(Recipe adapted from The Spiffy Cookie)

Ingredients:
  • Juice of 1 lime
  • 1/4 cup orange juice, chilled 
  • 2 oz. orange liqueur (Licor 43, Cointreau, or Grand Marnier) 
  • 1 (12 oz.) can beer, chilled 


Directions:
Squeeze the juice of 1 lime into a chilled beer mug. Pour in the orange juice and orange liqueur; stir gently to combine. Top off with chilled beer. ¡Salud! (Cheers!)


*Tip: I used orange liqueur, but you can also use orange-flavored vodka.
