Quesitos

There's nothing like a lazy afternoon to get me in the mood for baking! That and the kiddies insisting on making quesitos. Quesitos are shortbread cookies, sprinkled with powdered sugar. Quesitos' round shape and white color resembles fresh Mexican cheese, thus the name quesito, which means small cheese.

Quesitos

Ingredients:

  • 3/4 to 1 cup butter, softened
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2-1/4 cups flour
  • Powdered sugar

Directions:In medium bowl, mix together butter, sugar and vanilla until well combined. Stir in flour until dough comes together. Wrap in plastic wrap and chill 30 minutes. Preheat oven to 350º F.

On lightly floured surface, roll out dough to 1/4-inch thickness. Cut with 2-inch round cookie cutter. Using a spatula, carefully pick up rounds and place 2-inches apart on ungreased cookie sheet.


Bake for 10 to 12 minutes. Remove from oven and let cool 1 minute on cookie sheet.
Carefully dust cookies with powdered sugar on both sides.

*Note: This recipe yields about 3 dozen cookies. The quesitos seem to disappear before I can count them!

  1. hmm leslie these look delicious! I'll have to try these!, hey by the way do you have a recipe for those big pink cookies, they have here in the US in mexican bakeries, sometimes they put powdered sugar on them.

  2. Mo, you're in luck! I do have the recipe for the cookies you're looking for. They're called "polvorones", and in some parts of Mexico "quesitos" are also known as "polvorones". I will try to get the recipe on here soon!

  3. I really love your blog, I was referred by Amanda on borders aside. I remember you saying that you were going to do a tres leche post, are you still going to? I made one for my boyfriend on his birthday, but I was looking for another recipe from someone who I know cooks good. I have tried alot of your recipes and I really like them!     I'm so happy that you're enjoying my recipes. I'm hoping that now that I won't be teaching for awhile, I will have more time to post.

    I do plan on posting my recipe for a Tres Leches cake. Only I didn't think to take pictures when I made the Father's Day cake. I will make it again soon and take tons of pics to post on here.
