This atole can be thickened with a little cornstarch as well, but we prefer the consistency that the pumpkin offers. <br /><br />The small green pumpkin is only green on the outside. Inside it is a lovely bright orange. I used a larger light orange pumpkin/squash for this recipe and it had a very pale orange flesh. I would love to find a big, bright orange pumpkin like the ones found in the States. :)<br /><br />If you have anymore questions, I am more than happy to answer them. :) <br /><br />MONICA: Oooh!
