I was just describing it to my brother. We may give it a try. You are correct, basic home-made macaroni and cheese is the equivalent of a white sauce; you can do almost anything with it.<br /><br />My favorite version is made from sun-dried tomato penne pasta cooked with chicken mango sausage, onion, and garlic and then topped with a three-cheese sauce and torn bits of fresh basil.
