Thank you, thank you, thank you! My Salvadoran grandmother used to cook this dish when we visited her, once or twice a year. She didn´t use tomatoes though, but red peppers, and no chile for the kids. You just reminded me how much I miss her cooking and how I enjoyed her ejotes con huevo.

I luv luv luv ejotes con huevitos! My hubby likes them too. :) It was one of his dishes he wanted me to make! My suegra also likes to make sopa de elote, its not really a soup but more of a sauteed dish with corn, tomatoes, garlic, seasonings, and jalapenos.....top a tortilla with it and enjoy!
