What's for Dinner: Week 8

Welcome back to another edition of What's for Dinner - a weekly menu planning series with inspiration from my Cocina to yours.

There were two main objectives for our meal plan this week. The first half of the week was all about using up the leftovers from last Saturday's birthday party. I'm pretty sure we had enough leftover Carnitas, Frijoles Adobados, Nopales, Mexican Rice, Pico de Gallo, and Chile de Molcajete for another party. This week I was having some tooth troubles and had a wisdom tooth removed on Thursday, so the last half of the week was all about making soft, non-spicy foods that wouldn't irritate my dental work. 

Our meals this week...

Sunday
Tortas Ahogadas 

Even though we had plenty of leftover carnitas to feed the whole family, who gathered at my suegro's house for lunch, my brother-in-law had already ordered Tortas Ahogadas for everyone.

Monday 
Tacos de Carnitas

These tacos were a great way to use up three of the leftover foods - Carnitas, Frijoles Adobados, and corn tortillas - from last Saturday's birthday party. If you'd like the recipe for these tacos, let me know in the comments below. 


Tuesday


Yay! We used up the last of the carnitas and made a pretty good dent in the tortillas too. These turned out SO good, I already posted the recipe. 


Wednesday
Baked Garlic Lime Tilapia, Mexican Rice, and Nopales

We kicked off Cuaresma (Lent) with this soft baked tilapia and I was able to use up some of the leftover Mexican Rice and Nopales. I wasn't kidding last week when I said these leftovers would be popping up all week. (I've already posted this recipe too!)


Thursday
Sopa de Lentejas (Lentil Soup)


Today it had to be something soft and easy to prepare, because I had my wisdom tooth removed. But it also had to be something the whole family would love. This Lentil Soup fit the bill perfectly.


Friday

If you're a long-time follower of my blog, then you know that on Fridays during Lent we refrain from eating meat. These Quesadillas de Atún are my Mexican version of the classic tuna melt sandwiches I loved when I was a kid. Again, if you'd like the recipe let me know in the comments below.

Chinese take-out

Our favorite Chinese restaurant re-opened this weekend and well, that's what we had for lunch today.
