Breakfast with My Abuelita {Huevos Enchilados}

Some of my fondest childhood memories are of when I would sit in my grandmother's kitchen and watch her work her magic, turning simple ingredients into something delicious.  I especially loved watching her make breakfast.  Gramm would prepare me a cup of Cafe con Leche and regale me with stories of her childhood on the ranch in San Luis, Sonora (Mexico), while she was cooking.

One of my favorite breakfasts, besides Huevos con Chorizo, was Huevos Enchilados.  An easy, no-fuss breakfast made with scrambled eggs and leftover canned enchilada sauce.  It doesn't have to be leftover sauce.  You could open a new can or better yet, make the enchilada sauce yourself.  I use the sauce from my Bean & Cheese Enchiladas.

No matter what kind of sauce you use, you are in for a treat!
 

Huevos Enchilados

Ingredients:
  • 6 to 8 large eggs
  • 1 to 2 cups red enchilada sauce (depending on how saucy you want your eggs) 
Directions:
In a deep skillet over medium-low heat, scramble the eggs in a little butter or oil.  Season with salt and pepper.  Once the eggs are completely cooked, pour the enchilada sauce over the eggs and stir gently to mix.  Reduce the heat to low and simmer for about 5 minutes or just until the enchilada starts to boil.

Serve with Refried Beans and corn or flour tortillas and garnish with sour cream.  Enjoy!!!

  2. You know what? Mi esposo makes this for us all the time!  His mom used to make it for him and now he makes it for me =) (although sometimes it's salsa in place of enchilada sauce...equally yum).  I just have to say...I am TOTALLY LOVING your daily posting =)

  4. Hey, I make this all the time! I didn't know it had a name, I just thought it was something these boys made up! They also make there sauce and let it fry and then beat the eggs and slowly stir in the chile while it's cooking, looks more like soup. Does that one have a name? :)

  5. LOL Ezzy!  I thought I was the only one who wanted to go swimming in food.  How you feel about the frijoles in this pic, is how I feel about my Crema de Brocoli! :P

  7. I don't know if this is the actual name of the recipe, but it's what my grandmother used to call them.  I do know that eggs made in salsa or chile de molcajete is called Chilito de Huevo or Huevito en chile.  (Depends on who you ask.)

  10. Okay, the difference between enchiladas and enchilados is enchiladas a filling is wrapped in a tortilla and sauced and enchilados the filling is in the sauce?  If so, I just learned a new cooking concept, cool!  If not, please explain.
